Introduction

This salad has all the 'good for you' veggies, 3 kinds of beans for fiber, and it tastes great! You can add whatever other veggies you have on hand and adjust salad dressing & seasonings accordingly. Ingredients



    Whole Wheat Rotini Pasta, 2 cups dry
    Three Bean Salad, canned, 1/2 cup
    Zucchini, 0.25 cup, diced
    Red Onion Raw, 1/4 cup, diced
    Yellow Bell Pepper, 1/2 cup, diced
    Sugar snap peas or Snow peas, 1/2 cup, cut in small pieces
    Grape Tomatoes (approx 8-12 tomatoes), cut in half
    Light Parmesan Italian Reduced Fat Dressing, 1/4 cup
    balsamic vinegar, 2 tablespoons
    2 Splenda Packets
    Lemon, fresh squeezed, juice of 1/2 lemon
    Mrs Dash, Lemon Pepper Seasoning, 1/4 tsp
    Mrs. Dash seasoning original blend salt free, 1 tsp

Tips

We are on a sugar-free & low-salt diet, so I just used what I had on hand. You can add whatever other vegetables you like (broccoli, cauliflower, artichokes, olives, etc.). Just add more dressing & seasonings. This salad is better if it sits for a couple of hours or longer.


Directions

Cook pasta according to package directions. Then immediately run under cold water to stop the cooking process & drain the pasta. Add to large bowl.

Remove & drain about 1/2 to 3/4 cups of the three bean salad & put in the bowl with the cooled pasta. Prepare the zucchini, onion, pepper, snap or snow peas, & tomatoes & add to bowl.

Finally, combine the Italian dressing, Splenda, balsamic vinegar, lemon juice, & seasonings and pour over salad. Adjust seasonings to your taste. Stir well to combine. Let sit for a while - then enjoy!!
