Ingredients

    5.5 oz asparagus, trimmed
    4tbs balsamic vinegar
    3tbs extra virgin olive oil
    1tbs minced garlic
    6 oz (1med.)zucchini cut into strips
    1jar roasted red sweet peppers (drained)
    Fresh baby spinach leaves
    5 Low crab, high fiber tortilla's
    5 oz Semi soft goat cheese

Tips

I use minced garlic from the jar to save time. Also great if you add green onions and/fresh basil. Feta cheese is yummy too.


Directions

Trim asparagus stalks. Slice zucchini into thin strip slice sweet peppers into drips if necessary. Mix oil, vinegar, minced garlic and vegetables in large Ziploc bag and let sit for minimum of 30 minutes. Spread 1oz goat cheese on each tortilla. Place approx. 1/2 cup spinach leaves on tortilla then 1/5 of vegetable mix on tortilla, roll and enjoy.
