Ingredients

1 can artichoke hearts, drained
1 (15-ounce) can chickpeas (garbanzo beans), drained and rinsed
1/4 cup low sodium broth
1/4 cup plain Greek yogurt
1 tablespoon lemon juice
1 clove garlic
1/2 teaspoon parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon paprika
Optional: olive oil
Tips
Any broth will do, but I prefer chicken or veggie.
Best if refrigerated for a few hours before serving. I like to top it with a little more olive oil and paprika.
Directions
Add all ingredients EXCEPT the artichokes into a food processor and blend until smooth.
Check and adjust the seasoning if needed. Add the artichokes and, if desired, a little bit of olive oil. Pulse the food processor until the artichokes are chopped, but not pureed. (I like to keep the artichokes chunky, so the amount of pulsing here is up to you).
Serving Size: about 6-8 servings
