Ingredients

    Dry ingredients:
    1 cup of oatmeal flour (you can grind yourself at home in food processor)
    1/2 cup old fashioned rolled oat oatmeal
    2 scoops (2 servings as per package) protein powder, vanilla flavor
    1/2 teaspoon baking powder
    1/8 teaspoon salt
    1/4 cup of crushed and shelled walnuts

    Wet ingredients:
    3 ripe bananas, mashed
    2 whole eggs
    1 tablespoon oil
    1/4 cup of 100% apple juice

Tips

I used whey-casein blend protein from Dymatize- Elite Gourmet French Vanilla. If you need more sweetness, you may try adding some sugar-free sweetener like Stevia or Splenda. The cooking time is based on a small counter-top electric oven. Cooking times may vary if a regular size conventional oven is used.


Directions

Preheat oven to 400 degrees. Mash the ripe bananas and set aside. Mix the two eggs with the bananas. Mix all dry ingredients and fold them into the wet bananas/egg mixture. Add the remaining wet ingredients, the oil and apple juice. Pour as evenly as possible into 10 tin foil muffing cups or a muffin pan, if you have one for ten muffins. Bake for approximately 40 minutes, or until done (you may test by inserting a toothpick in the middle of a muffin. Let them cool for about 10-15 minutes. Enjoy!
