Introduction

Low-fat stuffed shells that are very yummy and very easy to make. Low-fat stuffed shells that are very yummy and very easy to make.
Number of Servings: 6

Ingredients

    10 oz. package of frozen, chopped spinach, thawed and VERY well drained
    4 oz. shredded light, low moisture, part skim mozzarella cheese
    1 cup nonfat cottage cheese
    1 egg white
    1 Tbsp grated parmesan cheese
    18 jumbo pasta shells, cooked and drained
    32 oz jar pasta sauce (fat and calories on these vary...I use Classico Tomato Basil)

Directions

Preheat oven to 375. Mix spinach, cheeses, and egg white until blended. Fill each cooked shell with approximately a tablespoon of the mixture. Place in a sprayed backing dish and spoon sauce over the shells. Cover and bake 30 to 40 minutes.


Makes 6 servings of 3 shells each.


**this can also be assembled ahead of time and refrigerated or, make a double batch and freeze the rest for a quick meal another night!**

    If I were to make this recipe again, I would definitely add additional seasonings to the filling. I did add garlic salt and onion powder, but unfortunately, it was not enough to make this dish as flavorful as I had hoped. - 3/11/10

    Just one note - I had to nearly double the filling to stuff 18 shells so perhaps the calories may be a little off. I also subsituted skim ricotta for half of the cottage cheese and it was delicious. - 12/14/09

    made this for supper tonight and i loved it. Added some ground pepper and italian seasoning to the mixture.Have leftovers for my lunches next week at work. - 9/18/09

    This was GREAT!! Doubled the recipe and put half in the freezer. I didn't put any extra seasoning in the filling and thought it was delicious, but I may try some next time... - 12/14/12
