Introduction

If you can find it you can use turkey italian sausage. My children will actually eat lentils this way. If you dont like it to spicey add less crushed red peppers. Ingredients

    1 lb bulk Italian sausage
    2 onions chopped
    8 cups water
    1 cup dried lentils, rinsed
    4 teaspoons chicken bouillon
    1/4 teaspoons crushed red pepper flakes
    2 packages (10 ounces each) fresh spinach
    coarsely chopped

Directions

In large saucepan, cook sausage and onion until
meat is no longer pink. Drain off all oil. Add water, lentils,bouillon and red peppers. Bring to a boil.
Reduce heat to low , cover and simmer for 30 minutes.Stir in spinach and cook for 5 more minutes until spinach is soft.

yields 10 1 cup servings
