Introduction

Ingredients

Soyrizo vegetarian chorizo
Eggbeaters
Eggbeaters egg whites
Sour baguette, whole loaf
Cheese shreds soy cheese
2% Mexican 3 cheese blend
Milk, fat free
Directions
Cook soyrizo over high heat until dry.
Cut 3" round loaf day old baguette into 1" diagonal slices. Line 9x13" pan with bread.
Mix 1C. eggbeaters, 1C. egg whites, 1C. milk in bowl. Add salt and pepper to taste.
Sprinkle crumbled sausage over bread pieces. Pour egg mixture over top. Add 1/2 C. cheese shreds. Cover with plastic wrap and refrigerate overnight or for 8 hours.
When ready to bake, take casserole out of refrigerator and let stand at room temperature for 15-20 minutes. Preheat oven to 350 degrees.
Bake uncovered for 45 minutes. Remove from oven and top with 1C. mixed soy cheese shreds and 3 cheese blend. Return to oven and bake 10 more minutes or until egg mixture is firm.
Let stand for 10 minutes.
Makes 8 1-1/2 C servings, or 3-1/2 x 4-1/2" squares.
