Introduction

Ingredients

2 c. uncooked rice (will make 4 c. once cooked)
3 c. black beans
1 can of sweet yellow corn
1 small jar of salsa
1 can of diced tomatoes
2 tbs. chili powder
1 tbs. southwest seasoning
6 4 oz chicken breast, grilled
Directions
Cook rice per directions. Heat the next 6 ingredients on stove. Grille chicken breast.
Serve 2 c. of bean mixture over 2/3 c. rice. Serve chicken to the side. Serves 6.
I had enough left over that I combined it all together, diced the chicken into bite size pieces and brought it for lunch. Would be perfect to serve in a pita!
