Ingredients

    1 cup dry couscous
    1.25 cups Chicken broth
    .25 cups fat free italian dressing
    .25 cups lemon juice
    2 tbsp dijon mustard
    1 splash balsamic vinegar
    3 oz Fat free feta cheese, crumbled
    .75 cups chopped roasted red peppers

Directions

1) Cook couscous based on package directions. Use chicken stock in place of water. Let cool completly.
2) Mix dressing, dijon, balsamic and lemon juice well.
3) Add feta, red peppers and dressing to cooled couscous. Mix well.
