Introduction

Very filling and delicious vegetarian lunch that packs in 2 servings of fruit/veggies, plenty of protein and lot of fiber. Very filling and delicious vegetarian lunch that packs in 2 servings of fruit/veggies, plenty of protein and lot of fiber.

Ingredients

    1/2 cup Salsa
    1/4 Avocados, California (Haas)
    1/4 lime, yields Lime Juice
    1/4 cup Yellow Sweet Corn, Frozen
    1/2 cup Bulgur, cooked
    1/4 cup Bush's Low Sodium Black Beans

Tips

Add quartered Cherry or Grape tomatoes on top (pictured but not included in nutritional info)


Directions

Bring 1/2 cup water (add boullion if desired) to a boil, stir in 1/4 cup Bulgur, cover and turn off heat... leave until all water is absorbed, approximately 20-30 minutes.

Place the cooked Bulgur in bowl, add Salsa, Black Beans, Corn and Avocado, in that order. Squeeze juice from lime over... Enjoy
