Ingredients

    Rice Crust:
    3/4 cup dry brown long grain rice
    1 1/2 cups water
    2 egg whites OR equivalent egg white substitute
    1 TBS Grated Parmesan Cheese

    Filling:
    1 1/2 cups grated low-fat cheddar cheese
    4 tsp all purpose flour
    1 1/2 cups chopped imitation crab meat
    3/4 cups egg beaters
    1 cup nonfat milk
    1/4 tsp salt
    1/4 tsp dry GROUND mustard

Directions

Cook rice in water about 30 minutes. Drain and mix with 2 beaten egg whites and parmesan cheese. Press into pie pan forming a crust. Bake crust 3 minutes at 425 degrees. Remove from oven.

While rice is cooking, chop crab meat. Mix cheddar cheese and flour and sprinkle into cooked pie crust. Sprinkle crab meat on top of cheese mixture. Mix egg beaters, milk, salt & ground mustard. Beat until smooth and pour over cheese & crab meat. Bake at 400 degrees for 45 minutes. Serve right away.

    Pretty awful. Bland. Cooked at way too high a temp for WAY too long. It was so hard we couldn't cut through it -- had to eat it like a piece of pizza. I won't make it again. - 11/9/12
