Introduction

Healthy,tasty,keeps well & easy to add/subtract ingredients. Healthy,tasty,keeps well & easy to add/subtract ingredients.
Number of Servings: 10

Ingredients

    3 cans of beans,well drained.Your choice..I like kidney,white & garbanzo.
    Diced red & green pepper
    1/2-1 onion small dice
    1 yellow & 1 green zucchini....medium chunk
    Celery diced.
    Mix all in large bowl.
    Add 1-2 TBL olive oil
    1/4 C rice vinegar
    dash of garlic pwder
    dash of italian seasoning
    S&P to taste. Mix well.
    Taste & adjust seasonings.
    If you prefer,sub italian dressing for the oil,vinegar & seasonings.
    Cover & refrigerate.After several hrs,stir & if too dry, add rice vinegar. You don't want it soggy.
    To serve, you can add diced veggies like tomatoe or meat to make it a meal.Serve on lettuce,as is or on cooked pasta.
