Introduction

This is a wonderful, special french toast. It has lots of fruit. The nuts add to the protein giving you about 7 grams per serving and one toast is plenty to satisfy that sweet tooth with healthy nutrition to get the morning off and running. Ingredients

    8 slices of raisin bread
    (day old bakery wheat bread works great)
    3 egg
    (for added nutrition use free range omega 3 enhanced eggs)
    1/8 t. cinnamon
    1 T. extra light olive oil
    1 banana
    1/4 c. walnuts
    1/4 c. oat milk or other milk product

Directions

On 4 slices of raisin bread, add a layer of thinly sliced banana (about 5/8 of the banana). Divide the walnuts between the 4 slices of bread and distribute evenly on top of the banana slices. Add the final layer of very thinly sliced banana. Press firmly the top slice of bread on the mixture. The eggs are beaten with the milk product and cinnamon. The compresses sandwich is careful dipped on both sides with the egg mixture and sauted in a skillet with olive oil on simmer to low which is covered with a lid. Brown on both sides. Serve alone or with fruit syrup, maple syrup or slice raw fruit.
