Ingredients

    3 pounds red potatoes, cut in 1-inch cubes
    1/2 pound fresh or frozen green beans
    1 cup chopped cucumber
    1/2 cup onion, finely chopped
    1 teaspoon garlic, minced
    4 baby carrots (optional), chopped
    1/4 cup mushrooms (optional), fresh, chopped
    2 tablespoons olive oil
    2 tablespoons white wine vinegar
    4 teaspoons Old Bay® Seasoning
    2 1/2 cups Spinach, fresh
    1 chicken breast half, boneless, skinless

Directions

1. In a 4-quart saucepan, place potatoes and cover with water. Bring to a boil. Cook, uncovered, 5-6 minutes. Add green beans, continue cooking 3 minutes; drain.

2. Grill chicken breast. Cut into bite-sized pieces.

3. In a large bowl, combine potatoes and beans with remaining ingredients. Mix well. Chill at least 1 hour; stir before serving.

4. Make a bed of spinach leaves (about half a cup) in each bowl. Top with approximately one tenth of the salad mixture.

Yields approximately 10 1 cup servings.
