Ingredients

    1 tsp Salt (to taste)
    1 fl oz Lemon Juice
    2 cup (1" pieces) Cauliflower, roasted
    2 clove Garlic (roasted, if you like)
    0.5 cup Roasted Red Peppers
    50 gram(s) Double Concentrated Tomato Puree
    1/4 cup Almond Flour
    1 Tbsp EVOO
    ancho chili, dried (powdered or chopped), to taste

    For the noodles:
    1 tsp salt
    2 cup, sliced Zucchini

    Optional:
    8 ounces Chicken Breast (cooked--included in the nutritional info), no skin, roasted
    Or: cooked shrimp, or cooked shiitake mushrooms5 grams Pepper,

Tips

Prep time includes cooking the protein or mushrooms, cauliflower, toasting the almonds, and roasting the garlic (if you prefer the flavour to raw).


Directions

Puree the sauce ingredients together. Prepare the zucchini noodles by laying them in paper towel and salting them, then patting dry. Heat them in a pan until hot but not losing water. Add the romesco sauce and heat through. Serve with sliced chicken breast (or cooked shrimp, or mushrooms for veg option).

Serving Size: Serves 2 very generously.
