Ingredients

4 extra small (less than 6" long Banana, fresh
.25 cup Butter, unsalted
.75 cup Granulated Sugar
1 medium Egg, fresh, whole, raw
1 tsp Vanilla Extract
1.5 cup Flour, white
1 tsp Baking Soda
75 gram CHOCOLATE bar - dark 70% cocoa Moser-Roth
.50 cup, chopped Walnuts
1 tbsp Cinnamon, ground
Tips
If you like a banana muffin that isn't too sweet, you can add only 1/2 cup of sugar.
Directions
Melt butter
preheat oven to 350 degrees
Line muffin pan with liners or grease
Mix butter and banana in a large bowl
Add sugar, egg and vanilla
Mix in chocolate and walnuts (both are optional though)
In a medium bowl, mix flour, baking soda and cinnamon until incorporated
Add dry ingredients to wet ingredients (use a spoon not a mixer) make sure to not over mix
Use an ice cream scoop to pour the mix into the prepared pan (makes more uniform muffins) fill about 1/2-3/4 full
Bake for 20-25 minutes (until toothpick inserted comes out clean)
