Number of Servings: 12

Ingredients

    1 egg
    1 1/4 cup milk
    1/4 cup margarine, melted
    2 1/2 cup flour
    1/4 cup powdered sugar
    1 tbsp baking powder
    1 tsp salt
    1 cup shredded apples with the skin
    1 1/2 cup of strong cheddar, shredded

Directions

Turn on the oven at 400F
Grease a 12 muffin pan
In a bowl, mix the egg, the margarine and the milk
In another big bowl, mix the flour, the sugar, the baking powder and the salt
Incorporate the liquid mix into the dry ingredients just enough to moisten everything
Add the apple and 1 cup of the cheese
Pour in the muffin pan
Sprinkle with the rest of the cheese
Cook about 20 minutes
If the muffins are baked but still pale, I broiled them for a minute, until golden
Makes 12 muffins

    These mufffins are not very sweet. I used whole wheat flour, and next time I would probably use more apple or apple sauce. - 7/3/08
