Lovely light texture, fresh Springtime (fabulous) taste! High protein salad or dessert, although I adore it for breakfast also. Egg white protein powder is optional. Ingredients

    1 pkg (8 serving-size) Sugar Free Orange Jello
    0.5 cup Orange sections, chopped
    0.5 cup Grapefruit sections, chopped
    32 grams no-sugar-added Egg White Protein Powder - plain or Vanilla, 1 scoop. optional
    1 cup Heavy Whipping Cream
    12 oz full-fat Daisy Cottage Cheese

Tips

I enjoy this for breakfast, salad, and dessert. IT is SO easy to fancy up and serve to impress kids and adults! Ingredients are easy to find at the grocery story --even egg white protein powder (aka Simply Whites in the bakers section). This powder is cheaper (although you have to buy more) when you buy it in the special diet section.


Directions

Freeze cream, small bowl ,and beaters until very cold. While whipping cream to soft peaks, sprinkle egg white protein powder into cream. In another bowl, fold dry gelatin powder into cottage cheese. Fold in citrus chunks. Fold in whipped cream. Pour into lightly-greased mould(s), cover and chill until set.
Enjoy plain, OR you can easily serve on a whole lettuce leaf, bed of chopped lettuce, or spiralized zucchini. To pretty it up even more, thin about 1/4 c mayonnaise with some lemon juice or sugar-free lemon-lime soda, sweeten to taste lightly, and drizzle over the gelatin. Garnish with sliced almonds or chopped toasted pecans. And if it is Easter, add a few jelly beans to the plate for kids, or Jordan almonds for adults! They'll be dazzled!
