Ingredients

4.0 oz Mozzarella Cheese
Ground Black Pepper
6.0 tbsp Fresh Basil
Sea Salt
6.0 cloves Garlic
2.0 Shallots
4.0 Red Ripe Roma Tomatoes
1.0 tbsp Balsamic Vinegar
3.0 tbsp Organic Extra Virgin Olive Oil (EVOO)
3.0 cup Organic Whole Wheat Fusilli Pasta
8.0 tsp Grated Parm Cheese
Directions
Boil water for pasta, salt water and add one tbsp. EVOO, add pasta cook until aldente. Reserve one cup of pasta water. Drain pasta and set aside.
Core and seed tomatoes and set aside. Chop garlic and shallots. Heat the same pan you cooked the pasta in, and add one tbsp. EVOO, chopped garlic and shallot.
Chop tomato and add to pan, stir quickly. Chiffon about twelve fresh basil leaves and add to pan. Stir quickly and stir in cooked pasta. Drizzle with last tbsp. EVOO, and about a 1/4 cup of the reserved pasta water, stir quickly and add four tbsps. Parm and 4 oz. Mozzarella, stir until creamy, salt to taste. If needed, add additional pasta water 1/4 cup at a time to thin sauce to desired consistency. Remove from heat and drizzle with one tbsp. Balsamic vinegar and serve immediately. Top with remaining parm and ground pepper.
