This is actually a breakfast/egg casserole, and not a Poultry category. But, since Breakfast or Eggs were not a Main Category, Poultry was as close as I could come. Ingredients

    8 large Egg, fresh, whole, raw
    8 oz. Pork Sausage
    8 oz Cheddar Cheese, shredded
    8 oz. grams Mushrooms, fresh, diced
    1 large Orange bell pepper, diced
    1 cup, chopped Onions, raw
    1/4 C. Coconut Flour
    1/2 cup Half and Half Cream
    1/2 cup, diced tamed Jalapeno Peppers

Directions

Cook sausage in skillet. Remove to cool. In Same skillet, cook diced peppers, onions and mushrooms until softened. Remove from heat and allow to cool.
Break up cooked sausage, as it tends to cook in large pieces.
In large bowl, mix eggs, coconut flour and 1/2 and 1/2. Add sausage, veggies, shredded cheese, and 1/2 cup diced tamed jalapeno peppers.
Mix well.
Pour into 9x13 pan, cover with foil, and back for 30 minutes. Uncover and back another 15-30 minutes, until the middle no longer jiggles when moved.
