Ingredients

    5.0 medium Tomatillos
    14.0 oz Tofu extra firm (Simple Truth Organic)
    1.0 cup kernels Yellow Sweet Corn, Frozen
    3.0 tbsp Olive Oil

Directions

Add olive oil to pan and heat on medium. Drain and coarsely chopped tofu. Saute tofu until golden. Add frozen corn. Cook 15 minutes. Chop tomatillos, add to pan, cook covered 5 minutes. Serve over seasoned rice.
