Introduction

Ingredients

3 beets (2" dia, sphere) Beets, boiled
6 slice, thin Onions, raw
2 clove Garlic
2 serving Truvia Natural Sweetener
3 tbsp Extra Virgin Olive Oil
1.5 tbsp (C) Vinegar, Red Wine (Gr Value)
1 dash Salt
Tips
You can add some oregano if you like. Stir before serving.
Directions
1j. Cut stems and small root from beets, gently scrub skins, place in saucepan to allow enough water to cover beets. Cook over medium heat to boiling and simmer 20 minutes. Allow to cool.
2. Peel beets and then cut into bite size pieces. Place in a bowl.
3. Very thinly slice a red onion so you have about 1/4 cup. Place in the bowl.
4. Crush three cloves and put into the bowl.
5. Add two packets Truvia (or your desired sweetener) and dash of salt.
6. Add oil and vinegar.
7. Toss well and allow to marinate at least an hour in the fridge.
Serving Size: Approximately 6 1/2-cup servings
