Ingredients

    1 English cucumber, quartered crosswise
    ¼ cup seasoned rice vinegar
    1 tbsp. tamari
    1 tbsp. water
    2 tsp sugar
    1 tsp toasted sesame oil
    ½ tsp finely grated ginger root
    1 tbsp. toasted sesame seeds

Directions

Using a vegetable spiralizer, julienne peeler or sharp knife, cut the cucumber into “spaghetti”- like strands. Place in a bowl.
In small bowl, stir together vinegar, soy sauce, water, sugar, sesame oil and ginger.
Pour over the noodles and toss to combine. Top with sesame seeds.
Let stand 10 minutes before serving.
