Chop all ingredients, and rinse the kidney beans Spray a large saucepan with cooking spray, and saute onions and garlic Add salt, pepper, rosemary and oregano Pour in tinned tomatoes, as well as about half a tin of water Add sugar if you're going to use it (it makes the tomatoes taste very good) Add all vegetables except the spinach, kale, and cilantro Simmer for at least 30 minutes (the longer you cook it, the better it tastes), stirring occasionally Add spinach and kale about 5 minutes before finished Add cilantro immediately before serving Serve with pasta, or eat on its own Serving Size: Makes 4 servings
