Ingredients

    1 Lb Ground Lamb
    1 C Red Onion, Medium Dice
    2 C Carrots Medium Dice (about 3-4 carrots)
    4 Cloves Garlic
    2 - 14oz Can Fire Roasted Tomatoes
    1 - 15oz Can Garbanzo Beans (drained and rinsed)
    1 tsp Corriander
    1 tsp Black Pepper
    1 tsp Kosher Salt
    2 tsp Dried Oregano
    2 tsp Dried Thyme
    1 tsp Cumin
    2 C Low Sodium Chicken Stock
    1/2 c cilantro and 1/2 c Crumbled Feta (optional)
    Additional salt and pepper to taste. Garnish with cilantro and feta cheese.

Directions

In a stock pot saute the ground lamb until full cooked. Add onions, carrots and garlic. Cook for about 2-3 min while stirring. (Do not add any additional oil as the rendered fat from the lamb will be enough to slightly brown the veggies.

Add all other ingredients and simmer for 25 min covered until veggies are soft. If it is too thick add a little more chicken stock. If it is a little too thin continue to cook for 5 min without the lid to reduce the liquid.

Garnish with fresh herbs (cilantro) and feta to add a bright pop to this earthy warm dish.
