Introduction

Something I whipped up for friends - gluten free, as I have a wheat allergy. And it was a big hit, so I decided to share. Something I whipped up for friends - gluten free, as I have a wheat allergy. And it was a big hit, so I decided to share.
Number of Servings: 8

Ingredients

    - Tinkyada Pasta Joy Brown Rice Penne, 1 16oz package
    - Baby carrots (raw), 1 cup chopped
    - Green Beans (raw), 1 cup chopped
    - Mayonnaise, light, 2.5 Tbsp
    - Tuna, Light or Albacore, 6 oz
    - Onions (raw), 1/4 cup chopped
    - Olive Oil, Extra Virgin, (a dash for the boiling water, and a dash for the salad itself)
    - Mrs. Dash, Onion & Herb

Directions

-Tinkyada's directions are so wonderfully easy. Boil water with a dash of Extra Virgin Olive Oil, then add package of pasta. Cook at a boil for two minutes, then turn off stove and cover pot. Set a cooking timer for 20 minutes.
-While pasta is 'cooking' in a covered pot, add tuna, carrots, green beans, onion, mayonnaise, Mrs. Dash or a similar mix, and a dash of Extra Virgin Olive Oil to a large bowl, mix well.
-When pasta is finished cooking, drain well.
-Add pasta to tuna mix.

When all ingredients are mixed well, cover with saran wrap and refrigerate for a 2-3 hours.

Serve well-chilled, and enjoy!

Makes 8 1-cup servings.
