Ingredients

    Salt & Pepper to Taste
    7 oz Barilla Plus Penne Pasta
    1/3 cup Olive Oil
    3 TBS Red Wine Vinegar
    Juice of 1 lemon
    Half a sack of Baby Spinach Chopped
    1 Can of Artichoke Hearts chopped
    1/2 cup chopped black olives
    1/2 medium red onion chopped
    1 cup Feta Cheese

Directions

Prepare past according to package directions.

Combine olive oil, vinegar, and lemon juice in the bottom of a bowl. Add the remaining ingredients plus the pasta to the bowl and toss until well combined. Season with Salt and Pepper and serve.

Makes 8 1-cup servings.
