Ingredients

1 package Simply Potatoes, southwest style hashbrowns
1 Cup chopped onions
1 Cup Egg Beaters Southwestern
1 Cup milk( I used 1%)
1 Cup shredded cheddar cheese
Directions
Preheat oven to 350 degrees
Spray 8x8 inch square baking pan with nonstick cooking spray
Spread hashbrowns on bottom of pan and cook in oven for 15 minutes
In skillet or microwave cook peppers & onions, until softened
Remove pan of potatoes from oven, put vegetables and shredded cheese on top
Combine eggs and milk in large bowl pour over top.
Bake (can cover with foil if you like) 35 minutes or until knife inserted in center comes out clean.
Serves 6

I actually made this a few days ago for me, my husband and kids. IT WAS AWESOME!!! The only thing I added was a little bit of seasoning in the egg mixture because I like my eggs with taste and a home made tomatoe garlic basil to go on top once done. I hilghly recommend this dish and it's filling! - 2/4/11
