Ingredients

140 g 1:1 gluten-free flour with xanthan or guar gum
1 tbsp fine cornmeal
½ tbsp baking powder
½ tbsp sugar
½ tsp smoked paprika
½ tbsp nutritional yeast
¼ tsp kosher salt
¼ cup (2 oz) chilled vegan herbed butter
1 tbsp olive oil
½ cup cold water

Directions
Heat the oven to 375°F and line rimmed baking sheets with parchment paper.
In a large bowl, combine the flour, baking powder, sugar, paprika, nutritional yeast and salt.
Cut in the butter until the mixture resembles small pebbles.
Add the vegetable oil and stir to combine.
Add the water a bit at a time, stirring constantly until the dough begins to come together. Wrap the dough in plastic wrap, and place in the refrigerator at least 30 minutes, up to overnight.
Roll out about ⅛” thick and cut into shapes.
Dock crackers with a fork and place on prepared baking sheets about ½” apart.
Bake until just beginning to brown, 7 to 10 minutes
Serving Size: Makes ~30 crackers, 6 (5 cracker) servings
