Ingredients

    200g Almonds
    3 tbsp Shredded Coconut Unsweetened
    50 g Crunchy Whole Earth Peanut Butter
    300g Medjool dates
    5 tbsp Raw Cacao Powder
    2 tbsp Almond Butter
    2 tbsp Organic Coconut Oil

Tips

I've always found breakfast the most difficult meal of the day. I don't like sugary cereal, bread gives me indigestion and eggs and bacon first thing? No way! Even healthy cereals leave me cold. But I know breakfast is important and necessary to get my metabolism going in the morning after hours sleeping. These breakfast balls are so tasty and satisfying, yet incredibly easy to make - I always have plenty in my fridge so I'm never caught short in the morning. They're great for snacks too. Directions

Blitz the almonds in the processor until they are broken up but not too fine. Add the dates, coconut and coconut oil and pulse til mixed. Add the nut butters and cacao powder and squish together with your hands. Roll into 12 balls.

If it feels dry and crumbly, either keep blitzing until the nuts release more of their oils, or add more coconut oil.

Pop into the freezer uncovered for an hour and then keep in an airtight container in the fridge.
