    3 large Zucchini, baby
    12 serving Cherry Tomatoes, Fresh, 1 Tomato
    140 grams Goat Cheese, Soft
    2 tbsp Extra Virgin Olive Oil
    2 tbsp Parmesan Cheese, grated

Directions

1. Preheat oven to 350 F
2. Scoop out the center of the zucchini
3. Spread goat cheese
4. Arrange cherry tomatoes on top, sprinkle parmesan on.
5. Drizzle with olive oil.
6. bake 30 minutes, or until zucchini is soft
