Ingredients

Red Potatoes with or with skins ( i like the small ones cut in half) 2lb
Scallions 1 / 2 cup
Hidden Valley ranch Dressing mix ( the powder in the packet ) 1/2 of the pkt.
1 cup of sour cream ( use either full fat if you want but i use reduced fat )
4 tbs of mayo ( reduced fat again but use what you prefer )
I also add salt and pepper to taste...or any other spices that you might enjoy but taste dressing first,,,,,,also i could not find the kidden valley ranch packet info on food tracker so the info is not entered into the calories and fat
Directions
Makes about 8 servings ( 1/2 cup)
Cut potatoes in bite size pieces and add to cold water and boil.
I dont salt the water but you can if you want to.
While the potatoes are boiling i slice the scallions and mix all the other ingredients in a bowl big enough to hold the potato also.
Add scallions to the dressing mix and let sit in fridge until potatoes are done.
After potatoes are done cooking and are fork tender..drain them in a colander for 10 minutes.
Then after they are well drained add the warm potatoes to the dressing and let sit for 10 minutes.
After the 10 minutes is up serve and enjoy
just a note...the reason i dont salt the water is because the powder dressing packet has a lot of sodium and because you dress the salad when the potatoes are warm they absorb all that salt.
