Directions
Cook the meat, add tomato sauce, season & set aside. Roast the eggplants after slicing & seasoning them. Chop all veggies including the eggplant slices. Stir fry all cubed veggies in the butter & a little oil & seasonings of choice. Layer half the veggies, then the beef mix, then the other half of veggies. In a blender add the feta, seasoning, egg & the parmesan. Top the veggies, bake until golden & serve.
