    0.25 cup Milk, nonfat
    3.0 tbsp Sunflower Oil
    67.0 Grams Carrots, raw
    510.0 Grams Eggplant, fresh
    50.0 Grams Mushrooms, fresh
    210.0 Grams Onions, raw
    250.0 Grams Zucchini
    150.0 Grams Peppers, sweet, red, fresh
    95.0 Grams Red Ripe Tomatoes
    8.11 oz Beef, ground, 80% lean meat / 20% fat, patty, cooked, broiled [hamburger, ground round]

Directions

Cook the meat, add tomato sauce, season & set aside. Roast the eggplants after slicing & seasoning them. Chop all veggies including the eggplant slices. Stir fry all cubed veggies in the butter & a little oil & seasonings of choice. Layer half the veggies, then the beef mix, then the other half of veggies. In a blender add the feta, seasoning, egg & the parmesan. Top the veggies, bake until golden & serve. Serving Size: Makes 8 generous portions
