Ingredients

    Dough Ingredients:
    4 Cups unsifted, unbleached white flour
    2 TBsp. toasted wheat germ
    2 tsp. salt
    1 tsp. sugar
    1/2 cup cooking oil
    1 1/2 cups warm water (105-115 deg)
    1 pkg. dry yeast

    Pizza Sauce:
    1 can tomatoes, crushed, 16 oz.
    1 can tomato paste, 6 oz.
    8 oz. tap water
    1 small onion, diced
    1 clove garlic, diced
    1 tsp. dried parsley flakes
    1 tsp. dried basil
    1 tsp. dried oregano
    1/4 tsp. salt
    Black Pepper to taste

Directions

Dough instructions:
Mix the flour ,Wheat Germ, salt & sugar into a large bowl and make a well in the center. Add the oil in the middle. Meanwhile, dissolve the yeast in the warm water. When it gets foamy and ready to use, add it also the well and mix all the ingredients together and knead thoroughly (like for bread) until the dough is smooth and satiny and does not stick to hands. Spread oil lightly on top of dough and cover with a light towel and let rise in a warm place, away from drafts, for about 2 hours or less if it rises quickly. Then punch the dough down and let rise again for about 45 min. Divide the dough in half and spread in two cookie sheets (with sides) which have been greased with crisco, not oil. Work from the denter of each pan to the outer edges. Put a little crisco on your hands when spreading. (they now have crisco with no trans fats).

Pizza sauce instructions:
You can begin making the sauce after you have made the dough.
Put a small amount of olive oil in a saucepan and brown lightly the onion and garlic. Add a little black pepper, the salt, oregano, parsley, basil, can of crushed tomatoes, tomato paste, 8 oz. glass of water. Mix together well and let it simmer very, very slowly for about 1 1/2 -2 hours, stirring occasionally so it doesn't burn. It will thicken and when it's the consistency of pizza sauce, take off the burner and set aside until you're ready to put the pizza's together.

TOPPINGS:
2 cups reduced fat shredded mozzarella cheese
Pepperoni, sliced, (divide the 32 slices between both pans of pizza)
Mushroom, 4 0z. canned, sliced
1 cup sliced black olives -4oz can
Diced green peppers (if desired)
onions, sliced (if desired)

Preheat oven to 375 degrees.

Spread the dough evenly with sauce. Sprinkle with mozzarella cheese (shredded) and then top with mushrooms , black olives and Pepperoni and any other veggie toppings you desire. Sprinkle with a small amount of grated parmesean cheese and ground oregano. Bake in the preheated oven for about 25 minutes or until nice and brown on the bottom of the pizzas.
