Ingredients

1/2 medium green bell pepper (diced)
4 medium scallions (diced)
2 cups cubed sweet potatoes
3 links Aidells Chicken and Apple All Natural Sausage (cubed)
8 large eggs
1 tsp Trader Joe's ghee
Tips
I highly recommend using silicone liners for muffin tins. If you don't have these, you can pour mixture into a well greased glass baking dish and cut into individual servings once cooked.
Directions
Saute pepper, scallions, sweet potatoes, and sausage in ghee. Cook until potatoes are fork tender. Spoon into lined muffin tins. It is okay if they are heaping full. Carefully pour in beaten eggs until each cup is full. Bake at 350 for 20 minutes.
