Ingredients

    1/4 cup Dates, chopped
    1/2 cup Orange Juice, unsweetened
    1/4 cup Honey or Golden Syrup
    1 medium Egg, beaten
    1 Tblspn Applesauce, unsweetened
    1/2 cup Wholewheat Flour
    1/2 cup White Flour
    1/2 cup Quick Cooking Oats
    1 Tblspn Oat Bran
    1 1/2 Tsp Baking Powder

Directions

Pre-heat oven to 350 deg F (180 deg C). Grease a 6 hole muffin tin.

Place dates, orange juice and honey in a saucepan bring to boil and simmer for @ 5 minutes. Cool slightly.

Place the date mixture, egg and applesauce in a jug and mix to combine.

In a bowl mix together the flours, oats, oat bran and baking powder, add the date mixture and mix until just combined, adding a little water if too stiff. DO NOT overmix.

Spoon into muffin tray and cook for @ 20 minutes or until skewer inserted comes out clean.

    These were really dry and the flavor was kind of bland. - 11/11/10
