Introduction
A healthy, delicious Pasta Salad with grilled chicken marinated in olive oil, garlic, and onions tossed with whole wheat pasta, parmesan, avocados, and tomatos. A healthy, delicious Pasta Salad with grilled chicken marinated in olive oil, garlic, and onions tossed with whole wheat pasta, parmesan, avocados, and tomatos.Number of Servings: 3
Ingredients

Salt, Pepper
Olive Oil
Garlic (2 Cloves) Chopped
Onions (1/2) Chopped
I Chicken Breast, Boneless and Skinless
1 Tomato (large) Chopped
Parmesean Cheese
1 Avocado, Chopped in pieces
Directions
Make a marinade of chopped garlic and onions, salt and pepper, and olive oil. Cover chicken breast with marinade and ideally it should sit overnight.
Chicken can then be cooked on a Grill, or Baked on high if an outdoor grill is unavailable. Meanwhile, pasta should be cooked as directed, and cooled in the fridge. Once chicken is cooked, it should be diced and also cooled. Then all ingredients (Chicken, Avocado, Tomatoes and Parmesean) are tossed together with the Pasta and served immediately!
For a low carb twist...Substitute Pasta with Romaine Lettuce and add extra olive oil and red wine vinegar.
