Ingredients

    0.50 lime yields Lime Juice
    1.50 cup, sliced Mangos
    2 cup Spinach, fresh
    1 cup, chopped Peppers, sweet, red, fresh
    1.75 cup Beans, black
    3 tbsp Extra Light Olive Oil
    0.33 cup Green Giant White Shoepeg Corn
    4 tbsp (C) Vinegar, Red Wine (Gr Value)
    2 serving Grape Tomatoes (3oz/12 tomatoes)
    0.50 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    1 cup Trader Joe's Organic Tricolor Quinoa
    4 serving Green Onion (fresh-1 stalk)
    4 serving Cilantro, fresh chopped 1/4cup (by MINDYYY)

Tips

Cook quinoa first and chop vegetables while it is cooking. Add quinoa after it has cooled. Us fresh lime and vegetables if possible, and mexicorn would be good in place of shoepeg corn.


Directions

Cook quinoa for about 20 minutes until fluffy, mix with chopped vegetables, whisk olive oil, lime, salt, pepper and vinegar, pour over salad and chill.
