Ingredients

    1 tbsp Extra Virgin Olive Oil
    2 tbsp. ground cumin
    1 cup Coconut Milk, unsweetened
    1 tsp Ginger root ground
    5 cloves garlic minced
    1/4 tsp Curry Powder
    dash red pepper
    1 medium onion, sliced thin
    32 oz. turkey breast grated
    4 cup turkey broth unsalted fat free
    1/2 tsp Dill weed, dried
    2 tsp Cilantro, dried
    5 stalks medium Celery, raw thinly sliced
    2.5 cup, chopped Carrots, raw
    2 cups Green Beans, Frozen, Pictsweet (2/3 cup = 81g)
    2/3 cup Quinoa, uncooked
    3 tbsp Garam Masala (optional)


Directions

1. heat oil in crockpot
2. add cumin gently heating until it begins to crackle
3. add milk, ginger, garlic, red pepper; mix thoroughly
4. add onions, turkey, and broth
5. add dill, cilantro
6. add remaining veggies, quinoa, Garam Masala
7. Mix, cover and cook on High for 4 hours or Low for 7-8 hours
