Ingredients

1 1tsp Olive Oil
1 cup, pieces or slices Mushrooms, fresh
.25 cup, chopped Scallions, raw
1 serving Cheese - Swiss (shredded) - Kraft - 110Cal/1/4-Cup (by ***DEBRA***)
.5 tsp Pepper, black
4 large Egg, fresh, whole, raw
5 serving Egg white, large
1 cup Milk, 1%
Tips

Directions
Preheat oven to 325. Coat muffin tin generously with cooking spray.
Brown sausage in skillet, adding chopped mushrooms to sausage the last few minutes sausage cooks (the recipe called for mushrooms to be sauted separately n the olive oil, but I like them cooked with sausage). Let sausage mixture cool for a few minutes then add scallions and cheese.
Whisk together the eggs, egg white, milk and pepper.
Spoon sausage mixture evenly into muffin cups, then pour egg mixture into muffin cups over sausage mixture.
Bake for 25 minutes or until tops are beginning to brown. Remove from oven and let cool. Enjoy!
