Ingredients

    2 oz (3/4 cup dry) Banza Chickpea Pasta
    1/4 cup Buitoni Pesto
    14 ounce block of tofu
    1/4 cup Parmesan Cheese, grated (or vegan alternative)
    1/25 tbsp Butter
    6 Cherry Tomatoes
    3 oz Matchstick Carrots

Directions

Cook pasta, toss with pesto, stir in chopped veggies of choice (this uses cherry tomatoes and carrots). Drain tofu, toss with grated parmesan, fry until golden. Combine, eat.
