Ingredients

8 oz Barilla Mini Penne
0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
1 cup, pieces or slices Mushrooms, fresh
2 cup, sliced Zucchini
1 cup Del Monte Diced Tomatoes, No Salt Added
2 tsp Oregano, ground
2 tsp Garlic powder
1 tsp mixed herbs (dried) (by TABSNPICKLES)
2 oz Goat Cheese, Soft
2 slice (1 oz) Swiss Cheese
1 tbsp Butter, unsalted
1 tbsp Olive Oil
Directions
Cook pasta on water with garlic powder and olive oil.
Add olive oil and 1 tbsp butter to a pan, add onions and sautéed, then add mushrooms, zucchini and tomatoes without liquid. Season with garlic, oregano and Italian dry herbs.
Place half veggies on baking dish, add goat cheese, pasta and rest of veggies. Top with Swiss cheese and bake 15/20 min
