    20 serving Large eggs
    2 cup, chopped Kale
    2 cup, diced Ham, regular (11% fat)
    0.5 cup (8 fl oz) Water, tap
    1 cup, pieces or slices Mushrooms, fresh
    0.5 pat (1" sq, 1/3" high) Butter, salted
    1 tsp Onion powder
    0.5 tsp Garlic powder
    1 tsp Pepper, black


Whisk eggs and water and set aside. Chop up ham, mushrooms and kale into a very small dice. Cook ham, mushrooms and kale until majority of moisture cooks out. Put aside to cool and add onion powder, garlic powder and pepper. Put one Tablespoon of ham mixture in muffin cup sprayed with nonstick spray. Cover with 1/4 cup of egg mixture. Bake for 20 minutes at 350 degrees. Serving Size: 24
