Introduction

Found this in Simply Delicious magazine and tweeked it some. It is really tasty and good way to get lots of veggies and protein. I tried it with frozen mixed berries as well and it was yum0. Ingredients

    4 C Spinach
    2 C cubed fat free Louis Rich turkey breast
    1 small red onion sliced thing and separated into rings
    2 C sliced mushrooms
    2 small tomatoes diced
    1 1/2 C raspberries or mixed berries
    1 can mandarin oranges
    4 TB raspberry jam-I use polaner all fruit
    2 TB red wine vinegar
    1 tsp lemon zest


Directions

In microwave safe bowl, heat the jam, vinegar and zest until jam melts, stir well and let cool.
On 4 serving plates divide the salad ingredients equally, drizzle dressing over salad and serve.
Can serve with bread, rolls or make easy fat free cheesy quisadellas. makes 4 servings
