Ingredients

    24 strips of bacon
    8 oz Cream Cheese
    .5 tsp lime zest or 1tsp lime relish
    1 tsp Curry powder
    1 dash Salt
    1 dash Pepper, black
    1/8 tsp Garlic powder
    1/4 cup Spinach chopped

Directions

Preheat your oven to 400F
Take a mini muffin pack and place it upside down on a cookie sheet.
12 strips of raw bacon you will cut in half and place crossing over each other on top of the muffin cup so that it covers the bottom of the cup and comes all of the way down. Then place a full bacon strip wrapped around the cup to seal it in. It's best to cover every other one so that the bacon doesn't attach to different cups.
Bake in the oven for 20 minutes or until desired crispness.
Let bacon cool for a couple of minutes and remove from the muffin tin. Let cool completely before filling.
While the bacon is cooling soften the cream cheese. Mix in all other ingredients until smooth. You can replace the lime zest with lime relish as well to add some extra flavor and adjust which curry powder you want to use. I used a regular yellow curry powder.
Once the bacon has cooled fill the cups and sprinkle with chopped chives or green onions.
