Ingredients

20 ounces Chicken Breast (cooked), no skin, roasted - cut into 6 thin breasts
1.5 cup ALF'S NATURAL NUTRITION READY TO EAT BROWN RICE CEREAL PUFFED BROWN RICE, ground
2 large Egg, fresh, whole, raw
0.66 cup Flour - oat
4 tbsp Olive Oil
1 fruit without seeds Lemons
3 cup Fresh Express Sweet Butter - Green & Red Butter Lettuce Mix

Directions
Heat the oven to 200 degrees.
Zest lemon into a breading pan. Mix in ground puffed rice and season with salt and pepper.
In another pan mix flour with salt and pepper.
Whisk the eggs in a wide bowl.
Season the chicken lightly with salt and pepper. Dredge chicken in flour then egg then puffed rice cereal.
Put 2 tablespoons in a pan on medium to medium-high heat until a slight shimmer starts. Cook 3 breasts at a time, adding the rest of the oil for the other 3 breasts.
Keep chicken warm in the oven while cooking in batches.
Mix lemon juice with salt and pepper until tasty. Use as salad dressing and a light drizzle over chicken.
Serve with salad on top of half the chicken breast spilling on to the plate.
