Nothing says summer like this fresh mango salsa! This is my go-to recipe when I'm asked to bring a dish to a party or BBQ. It's great on its own or with tortilla chips. Ingredients

2 medium mangos, diced
1 large red (or green) pepper, diced
1/2 medium red onion, diced
1 red tomato, diced
1 green jalapeno, diced small
2 tbs. fresh cilantro, chopped
juice of one lime
salt to taste
Directions
Makes 6 1-cup servings
Chop all fresh ingredients in equal sizes and mix together in bowl. The jalapeno should be diced very small. Rinse black beans and add to bowl. Add juice of one lime and salt to taste.
Serve with fish, chicken, tortilla chips or as a refreshing snack.
