Ingredients

    6 small boiled red potatoes w/o skin
    Cooked in 1tsp of salt and red pepper flakes

    2 large eggs - hard boiled
    1 tbs black pepper
    2 small packages of imitation crab meat
    1/4 cup of olive oil

Directions

Boil potatoes in 1 tsp salt and crushed red pepper
-in their skin!
Boil 3 eggs and chop

Once potatoes are cooked, peel of the skin and chop into small cubes.
Finely chop hard boiled eggs as well
Mix potatoes; eggs; crab meat and season with approx 1tbs of pepper as well as olive oil.

Chill before serving - I love this potatoe salad my Mom used to make it all the time.
