Ingredients

    15 oz. Chicken breast (I use tenders)
    1 1/4 teas. salt (less if you'd like)
    1/5 teas. pepper (less if you'd like)
    2 cups Fat Free Half and Half
    1 cup 1% milk
    4 tbs. flour
    1/4 teas. nutmeg (optional)
    4 tbs. Country Crock Light (or other light butter/marg.)
    4 garlic cloves, minced
    1/2 cup grated parm. cheese (I use 1/4 parm and 1/4 asiago for variety)
    Pasta of your choice ( I use Ronzoni Smart Taste Ziti/Penne. Tastes like "regular" pasta but much higher in fiber, etc..)

Directions

Makes 5 VERY generous servings - 1 cup pasta per person! ( I'm not sure of exact amounts of chicken & sauce because I normally just portion it out per person/plate in our 5 person family...)

1. Cut chicken into bite sized pieces.
2. Sprinkle the chicken w/ 1/2 of the salt and pepper.
3. Spray skillet w/cooking spray and cook over medium heat until completely done.
4. Combine the half and half, milk, flour, nutmeg, and remaining salt and pepper.
5. Melt the marg. and add garlic, cooking until golden (about 1 min.)
6. Wisk in the half and half mixture and stir constantly for 2 - 3 minutes until it bubbles and thickens
7. Add chicken and cheese
8. Divide evenly over 1 cup servings of pasta
