Ingredients

    29 gram(s) Puritan Pride Soy Protein (29g)
    1.75 cup Flour - Gold medal all purpose flour
    3 tsp Baking Powder
    .5 tsp Salt
    .5 tsp Cinnamon, ground
    3 tbsp Egg substitute, liquid (Egg Beaters)
    .25 cup Canola Oil
    1 serving Silk, Unsweetened Soymilk, 1 cup
    .5 cup Applesauce, unsweetened
    .5 cup, packed Raisins
    1 tbsp chopped walnuts

Directions

Measure dry ingredients into bowl. Whisk thoroughly. Mix eggs, oil soymilk, and applesauce together and add to dry ingredients. Fold in raisins and walnuts. Scoop into muffin tin, using 1/4 cup measure. Bake at 425 for 20 minutes.
